This single-cru cuvée is crafted exclusively from Chardonnay grown in the Grand Cru village of Avize, in the heart of the Côte des Blancs. Avize is a village closely linked to the Boizel family’s heritage, where the house still owns vineyards today.

Vinification

Unlike much of Champagne, Avize, a Grand Cru village in the heart of the Côte des Blancs, is entirely dedicated to Chardonnay. Its east and south-east facing slopes rest on exceptionally pure chalk, allowing the vines to root deeply and express the terroir with precision. This singular environment gives rise to wines of remarkable tension and saline minerality, combining crystalline freshness, linear structure and a subtle chalky texture, while retaining depth, elegance and quiet power.

Tasting

The colour is pale gold with subtle green highlights, showing remarkable clarity and brillance. The effervescence is fine, precise and persitent, forming a refined, delicate bead.

The nose is pure and focused, opening on floral notes of acacia and hawthorn, before revealing crisp citrus tones of lemon zest and grapefruit. Hints of fresh brioche and toasted almond appear with aeration, underlined by a distinctly chalky, saline freshness.

On the palate, the attack is incisive and vibrant, immediately expressing the taut, mineraly identity of Avize. The texture is silky yet precise, carried by a saline thread that enhances the wine ‘s linearity and depth. Flavours of citrus peel, fresh hazelnut and crushed chalk unfold seamlessly, leading to a long, crystalline finish driven by pronounced minerality and refined salinity.

Food & wine pairing

Its freshness and precision make it the perfect companion for seafood (oysters, langoustines, scallop carpaccio) or white fish ceviche. It will also pair wonderfully with fresh, creamy cheeses such as ash-covered goat cheese or Brillat-Savarin.
