Vinification

The clear wines that best express the year’s potential and richness were selected for this 2007 Joyau de France Rosé: Premier and Grand cru Pinot Noir (Mailly, Vertus, Cumières) and Chardonnay (Oger, Avize, Le Mesnilsur- Oger. The red wine (Pinot Noir) used in in the blend comes from the renowned Les Riceys vineyard. The 2007 Joyau de France Rosé has been aged for ten years in the cellars. A low dosage preserves its purity and highlights its extreme finesse and great aromatic complexity.

Tasting

Very bright in colour, it is a pure, refined pink, with yellow and copper glints. The effervescence is well defined with fine, lively bubbles. The nose evokes rose petals and a compote of ripe, sweet fruit (peach, mirabelle plum, fig). Aromas of almonds and dried fruit and nuts gradually emerge. The palate is fresh and soft. It combines spices such as cinnamon, pink pepper, candied citrus fruit (orange) and hints of smoke. The flavours are very subtle. The wine’s wonderful structure is assertive, with slightly tannic and chalky notes. The long and delicate finish is underpinned by invigorating freshness.
