The 2008 Cuvée Sous Bois is made with grapes from four Grand Crus: Chardonnay from Chouilly and Avize in the Côte des Blancs, Pinot Noir from Bouzy and Verzenay in the Montagne de Reims. The wine is vinified in old Champagne and Burgundy barrels: the wines are kept in these barrels for 9 months after the harvest, until they are bottled in July.
A luminous, deep gold colour, with fine columns of persistent bubbles. On the nose, initial woody notes give way to intense aromas of white blossom, cooked fruit, and grilled almonds with hints of spice (cinnamon, vanilla). The backbone is remarkably fresh. The palate offers superb, complex body, lightly balanced between freshness and power. The rich aromatic range is intensified with notes of red fruit. It displays remarkable vinosity and elegance. The finish is exceptionally long.
Cuvée Sous Bois is a great wine which requires a few minutes to fully develop in the glass. It is a perfect Champagne to drink throughout a meal.
