Elaboration

2007: a very early and demanding year, promising both the best and the worst. The summer was really humid but the beautiful weeks during the harvest allowed to get a good ripeness, especially for the Chardonnays. The crop began on the 23rd of August. At the still wines tasting the Chardonnays from the Côte des Blancs were
magnificent. Four different crus were selected and blended: Avize, Le Mesnil sur Oger, Oger and Vertus.
Only the first press juice was used.
After eight years in the cellars, this cuvée 100% Chardonnay expresses all the personality of the crus coming from the Côte des Blancs and reveals its ageing
potential.

 

Tasting

The robe is light gold crossed by green reflections, with very tiny bubbles.
The nose is sophisticated with fresh aromas of flower (hawthorn) and of dry fruits (almond) revealing citrus fruit nuances (grapefruit and lemon peel). The aromatic complexity also offers some pastry notes supported by a refined minerality.
On the palate, the texture is dense and wide with a straight and balanced structure.
The freshness and vivacity, features of this vintage, harmoniously combine with the mineral notes, almost saline and with toasty aromas (grilled hazelnut and brioche).
The final is persistent, fresh with an elegant minerality.

Suggested pairings

Seafood and noble fishes (grilled scallops, turbot with fennel or arctic char with small vegetables) but also farm poultries, roasts or casseroles (Poularde of Bresse cooked with fresh herbs and pistachios).
